Vegan Blueberry Muffins

Here is a pretty simple vegan blueberry muffin recipe. Still people ask me how can you bake without eggs and butter etc but it’s so so easy if you have the right recipes. I find it is just kinda rethinking the basics of baking and the equations of the recipe. Vegans did not invent eggless muffins and cakes, those recipes have been around for decades if not centuries. Back in early early 1900s during the World Wars women were coming up with new ways to make delicious treats with the rations they had… usual when they were very low or completely without dairy and eggs. This is my interpretation of vegan blueberry muffins in which I use the Baking soda with vinegar method to make them rise. In fact that probably my favourite method for all baking. Skillet Rock Cakes with Goji Berries

This week I have been once again facing the perils of cooking without an oven, and in my mind all I want to do is bake. I made up the batter for these rock cakes with the intention of baking them traditionally in the oven.  I had everything all ready and the oven pre-heating! Then disaster…  Once again I heard the noise of the gas change,  had a look underneath and saw the fuel pipe was on fire on the OUTSIDE!  Argh ! The thing drives me crazy. I was determined to not let the batter go to waste…  Wasting food is not something that happens on these ships.  There is a very well enforced rule of ‘if you put it on your plate… Your eating it’. Fluffy Sugar Free Pancakes

  This pancake recipe is one I have been refining for about 3 years and finally think it’s time to share it. Its gone from the batter being to thin, to them falling apart when they are being cooked etc. I’m pretty satisfied with this recipe now. They hold their shape, the batter is easy to handle, as well as using agave instead of refined sugar and coconut oil as a healthy fat alternative. I would recommend using soya milk or almond milk for these, as I have found rice milk doesn’t work so well. I like to eat these with jam, such as homemade damson jam, or just with lemon juice and syrup. You can also easily throw in a handful of blueberries or chocolate chips into this batter. Before I became vegan I used to love the taste of eggs, and although scrambled tofu is awesome in its own right, it used to sometimes miss that taste I believed you could only get from actual eggs. By no means was I about to start contributing once again to the suffering and enslavement of chickens again just so I could have some scrambled eggs for breakfast, instead I resigned myself to that fact that it was one flavour I would live without. Sugar-Free Vegan Banana Pancakes

In my eyes vegan pancakes are good for eating any time of the day! I love all kinds, plain, banana, blueberry, apple and sometimes even chocolate chip. There’s just something so lovely about how simple and satisfying they are. I like this recipe as the banana in the pancakes isn’t too overpowering, and they are naturally sweetened instead of being filled with processed sugar. I like to serve them smothered with maple syrup, with wedges of lime or fresh berries on the side. Sugar-Free Vegan Banana Pancakes   2 cups plain flour 1 Tbsp baking powder ¼ tsp salt ½ tsp cinnamon powder (optional) ⅛ tsp nutmeg (optional) 3 large bananas, mashed 2 cups non dairy milk 3 Tbsp sunflower oil 4 Tbsp maple syrup In a mixing bowl sift the flour, baking powder, salt, cinnamon and nutmeg.  In another bowl mash the bananas up really well with a fork, then stir in the milk, oil and maple syrup.
