Basil is one of my favourite ingredients, and after getting hold of huge bunches of the stuff really cheap, this dressing just seemed like the right things to do. Not just for salads, it can be served over risotto balls, in sandwiches, over pasta or anything you like really!!
FRESH BASIL DRESSING
1 cup fresh basil leaves
½ tsp freshly ground black pepper
1 tsp Himalayan pink salt
4 tsp fresh lemon juice
5 Tbsp extra virgin olive oil
Blend all ingredients together with a hand held stick blender until smooth. Keep any leftovers in a sealed jar in the fridge.
