This is a recipe I have been meaning to type up for a while and is my absolute favourite chocolate muffin recipe, it just works every time and is full of flavour and never dry! I am always surprised when buying vegan cakes how often they are horrible and dry. I think with all the recipes out there for vegan baking now there really shouldn’t be any excuse for tasteless and dry cakes that aren’t even edible, especially if your selling them! I love to show people who are not vegan just how good vegan baking can be… that the bad reputation vegan baking has is definitely not justified. I have had a little forced break from posting this last few weeks… going out to sea tends to ruin our internet connection! We arrived safely at our new destination after taking the swell and wind on the beam the whole trip, making it a not so lovely but very rolly transit, and I am extremely happy to be on dry land again. In our new home port there is an even more significant lack of easy vegan food available… but I like a challenge, and I think when you are forced to cook with limited ingredients you learn a lot more about food and about cooking, finding new ways to serve beans and lentils 3 days running without the crew hating you for it! So… this is my first ever blog post. I wanted to start with something epic, and this is one of my all time favourite desserts. Its pretty easy to make, and non-vegans are always shocked something this good can be dairy and egg free. Not sure why so many people view eggs and dairy as indispensable ingredients, and believe nothing can be delicious without them. I guess it’s our job to prove them wrong! This is the perfect dessert if you want to impress someone with vegan food, a good example of us not missing out on anything, especially fancy desserts. For a plain chocolate torte, just skip steeping the mint, and serve with fresh berries instead. And make sure you used some good quality dark chocolate.
