Coconut Lemon Tart

This tart is lovely and refeshing as well as being very easy to make. I opted for a no bake crust with this as I kind of have a love hate relationship with pastry. I love to eat it, but recently I have no interest in making it. I used to love making pastry but I think my change of opinion has something to do with the lack of good quality vegan baking ingredients in Cape Verde. They have a number of vegan margarines here, but the label ‘fully hydrogenated vegetable oils’ seems to be used as a positive selling point for the product. Its not even kept in the fridge. The idea of trying to use this to make pastry repulses me slightly. So here is my recipe for Coconut Lemon Tart, with a gluten free no bake crust. DIY Milks #1 Coconut

It became DIY month on the ship for a little while before left. Everything from seitan from scratch (as in washing it down from plain flour the old fashioned way, usually ending up looking like I have taken part in a flour and water bomb fight), to freezing homemade vegetable stock cubes made from my vegetable peelings, essential when all the supermarkets offer nothing but MSG filled rubbish! I even dabbled in making my own sundried tomatoes on the top of the fly bridge. This little recipe in particular came in extremely handy. Most places you can get hold of non dairy milks easily, though sometimes they are very expensive, or are the kinds that are full of sugar. This was my favourite as I love the taste of coconuts, and decissated coconut was cheap and easy to get hold of. Raw Mango and Coconut Pie

For this recipe I really wanted to take advantage of some of the local ingredients, and have been wanting to make another raw cake for a while now. The mangoes here are the biggest I have ever seen! I don’t think I had ever had a good mango before I came here in comparison, and its nice to know it they haven’t been flown thousands of miles and been artificially ripened for us to enjoy them. It’s so important to support locally grown food, so for us right now in Senegal that means tons of coconuts, mangoes and bananas, and the best I have ever had of all three. So here you have a raw coconut and mango pie that incorporates all of those things in a perfect union.
