Coconut Lemon Tart

This tart is lovely and refeshing as well as being very easy to make. I opted for a no bake crust with this as I kind of have a love hate relationship with pastry. I love to eat it, but recently I have no interest in making it. I used to love making pastry but I think my change of opinion has something to do with the lack of good quality vegan baking ingredients in Cape Verde. They have a number of vegan margarines here, but the label ‘fully hydrogenated vegetable oils’ seems to be used as a positive selling point for the product. Its not even kept in the fridge. The idea of trying to use this to make pastry repulses me slightly. So here is my recipe for Coconut Lemon Tart, with a gluten free no bake crust. Sugar-Free Vegan Banana Pancakes

In my eyes vegan pancakes are good for eating any time of the day! I love all kinds, plain, banana, blueberry, apple and sometimes even chocolate chip. There’s just something so lovely about how simple and satisfying they are. I like this recipe as the banana in the pancakes isn’t too overpowering, and they are naturally sweetened instead of being filled with processed sugar. I like to serve them smothered with maple syrup, with wedges of lime or fresh berries on the side. Sugar-Free Vegan Banana Pancakes   2 cups plain flour 1 Tbsp baking powder ¼ tsp salt ½ tsp cinnamon powder (optional) ⅛ tsp nutmeg (optional) 3 large bananas, mashed 2 cups non dairy milk 3 Tbsp sunflower oil 4 Tbsp maple syrup In a mixing bowl sift the flour, baking powder, salt, cinnamon and nutmeg.  In another bowl mash the bananas up really well with a fork, then stir in the milk, oil and maple syrup. Refeshing Summertime Sugar Free Cordials

Currently where I am its summertime all the time, much to my dislike! I miss cold climates and seasons everyday, the flowers in spring, the falling leaves in autumn, And rain!! I haven’t seen any for 3 months! I am not someone who was made for warm climates! All least treats like these make it that bit more comfortable. This is a sugar free version of hibiscus syrup, and a drink I actually prefer without the sugar. Locally here it is call Bissap and a drink you can get everywhere, and everyone who makes it seems to think the more sugar the better, sometimes so much so that its nearly impossible to drink! So I wanted to make my own healthy version as I love the flavour of hibiscus.
